Taco Cookies

Taco cookies! They look like the real thing and are sure to impress your recipients! I originally saw the idea from a Tik Tok post. They had used Nilla Wafers from the store. Did you like Nilla Wafers as a kid? I loved them! They went in the same category as graham crackers though. I could only eat them dipped in milk and not by themselves. Too dry! Apples never fall far from the tree though as my six year old daughter loves them but she LOVES them plain so maybe apples do fall far…

Anyway, I put them in my cart at Walmart along with $200 worth of groceries and my card got declined! Awkward! Humiliating! Life? Yup, that’s life. Luckily I had some flour, sugar, and butter on hand as well as all of the other simple ingredients. Although you might argue that shredded coconut and crushed lifesaver is not something that “you simply always have on hand”, and you would be right. So make sure you get that in your cart because these just won’t be the same without!

I got this recipe from Sugar Spun Run and they turned out delicious!

Nilla Wafer recipe:

1/2 cup butter

2/3 cup sugar

1 large egg

4 tsp vanilla

1 1/2 cups

3/4 tsp baking powder

1/2 tsp salt

1 Tbsp milk

Preheat oven 350 degrees. Combine wet and then dry ingredients. Scoop dough into two teaspoon-sized balls and place two inches apart on a baking sheet lined with parchment paper. Bake for 12-14 mins. I purposely left mine in slightly longer to get more of a realistic “taco shell” color.

Perfectly Chocolate frosting:

1/2 cup butter

2/3 cup cocoa powder

3 cups powdered sugar

1/3 cup milk

1 tsp vanilla

Melt butter, add in cocoa and whisk then whisk in powdered sugar, milk, and vanilla. You can also cut this recipe in half.

Cut the cookies in half shortly after you take them from the oven so they cut cleanly without breaking. Fold them half and scoop about a tablespoon of frosting into each taco. This will be the taco “meat”.

Next get some orange and green food dye. But before you mix it into the shredded coconut, water it down some with one tablespoon of water then mix it into the shredded coconut and mix thoroughly.

Lifesavers worked really well for the chopped veggies but use whatever hard candy you have on hand and dice and crush it with a knife.

Top your “taco” with the cheese, lettuce, and chopped tomatoes and peppers!

And enjoy! I served mine during Cinco De Mayo and they were a hit with the kids and neighbors!
